What about sliced, spread out on a tray, sprinkle herbs on top then cook on low heat in oven for a few hours, then store (freeze) for later, great on pizzas and italian dishes. PS Don't send any my way, our izzue is as big as yours!
So jealous...I planted mine about 2 weeks ago and last week it got so cold that a few of them froze then yesterday it was 100 degrees! Go figure! Can't wait for some good juicy tomatoes here, but I do get tired of them by the end of our summer too. I always fill the freezer with sauces to last through the winter.
Um...can't think of what else to make. I like Jo's suggestion. We've got lots o' limes, lemons and eggs, maybe I could make some lemon/lime butter? Everyone that visits here goes out the door with a bag of something :)

Yes, thanks! Tomatoes are so expensive here this time of year, so I can by a ticket to Australia for the money......
